<p>Esco dall&#8217;ufficio, vado a comprare un po&#8217;  di verdura con Annalisa e scopro questa semplice ma gustosa ricetta. Dunque:</p>
<p>Preparo un peperone a cubetti e lo aggiungo al soffritto di cipolla, sfumando con vino bianco e aggiungendo brodo vegetale per la cottura.</p>
<p>Nel frattempo cuocio il riso, dopo averlo brevemente saltato in un soffritto di cipolla, sfumato anch&#8217; esso di vino bianco e cotto con brodo vegetale (e regolato di pepe, ma quello saporito).</p>
<p>Quando il riso è quasi cotto aggiungo gorgonzola e lascio fondere. A parte, passo al mixer il peperone e lo aggiungo al risotto, rimestando.</p>
<p>Di corsa a tavola accompagnando con un fresco bianco.</p>

<p>Questa volta, con Federico, ci siamo trovati a casa di Elisabetta per insegnare a lei ed Annalisa questa bellissima ricetta. A parte qualche divergenza sul tempo di cottura nel forno di Eli, il risultato e` stato apprezzabile.</p>
<p>pssss. ricordatevi di disporle molto distanziate nella teglia, crescono molto quando lievitano.</p>

<p>Questa e&#8217; una versione rivista della ricetta del Gelato al Caffe` dell&#8217;enciclopedia della cucina del <a title="Grande enciclopedia della gastronomia" href="http://www.bol.it/libri/scheda/ea978880456749.html" target="_blank">Guarnaschelli</a>, adattata alle dosi della mia gelatiera Gaggia. Inoltre, ho usato normale caffe` fatto con la moka al posto del caffe` liofilizzato.</p>
<ul>
<li>Latte  105 gr</li>
<li>Panna da montare fresca 200 gr</li>
<li>Caffe` (fatto con la moka)   2 tazzine (circa 90 gr)</li>
<li>1 fialetta di vanillina</li>
<li>3 tuorli d&#8217;uova</li>
<li>Zucchero 110 gr</li>
</ul>
<p>Mischiare latte, panna e caffe`, vanillina e fare bollire brevemente, poi raffreddare.</p>
<p>Montare i tuorli con lo zucchero, poi aggiungere a filo il composto preparato in precedenza, mescolando continuamente.</p>
<p>Mettere sul fuoco lento, mischiare lentamente fino a che si inspessisce (non fare assolutamente bollire).</p>
<p>Mettere nella gelatiera e lasciare mantecare.</p>

<p class="MsoNormal"><span lang="IT">Una volta fatto il gelato alla crema, avanzano le chiare d’uovo. Ho provato a utilizzarle facendo delle meringhe (di cui mi dichiaro parzialmente soddisfatto). Per il momento la ricetta che ho seguito è quella del Cucchiaio d’Argento:</span></p>
<ul>
<li><span lang="IT">3 chiare d’uovo</span></li>
<li><span lang="IT">150 gr di zucchero</span></li>
</ul>
<p class="MsoNormal"><span lang="IT">Ho montato a neve le chiare con lo zucchero al velo, poi, con un cucchiaio ho depositato le meringhe su una teglia precedentemente imburrata e leggermente infarinata. Ho poi infornato in un forno ventilato pre-riscaldato a 100 gr per circa 1 ora.</span></p>

<p class="MsoNormal"><span lang="IT">Nota: <em>le meringhe sono venute asciutte, ma di consistenza troppo friabile. Credo che serva variare i tempi di cottura. Vi farò sapere….</em></span></p>

<ul>
<li><span lang="IT">0,2 Litri di latte intero (meglio se crudo)</span></li>
<li><span lang="IT">0,2 Litri di panna fresca</span></li>
<li><span lang="IT">80 gr di zucchero</span></li>
<li><span lang="IT">1 scorza di limone</span></li>
<li><span lang="IT">3 tuorli d’uovo</span></li>
</ul>
<p class="MsoNormal"><span lang="IT"> </span></p>
<p class="MsoNormal"><span lang="IT">Bollire il latte, la panna, 30 gr di zucchero e la scorza di limone. Rimuovere la scorza di limone e laciare raffreddare.</span></p>
<p class="MsoNormal"><span lang="IT">Montare i tuorli d’uovo con 50 gr di zucchero; una volta pronti unire il latte/panna a filo continuando a mescolare.</span></p>
<p class="MsoNormal"><span lang="IT">Porre sul fuoco (lento) e continuare a mescolare finché la crema non inizia ad addensare, velando il cucchiaio. Togliere immediatamente dal fuoco e lasciare raffreddare.</span></p>
<p class="MsoNormal"><span lang="IT">Una volta freddo versare il tutto nella gelatiera per circa 20 minuti.</span></p>
<p class="MsoNormal">
<p class="MsoNormal">psss..servire in coppette fredde con una spolverata di caffé, oppure di cacao amaro oppure di amaro Vanna Tallin.</p>

<p class="MsoNormal"><span lang="IT">Questa ricetta si realizza con il <strong>microonde</strong>, è facile e veloce.</span></p>
<p class="MsoNormal"><span lang="IT">Ho cotto i cannellini con il cipollotto (e un pizzico di sale) per circa 15 minuti nel micro alla massima potenza. Intanto ho preparato i pelati tagliandoli a pezzettini.</span></p>
<p class="MsoNormal"><span lang="IT">Una volta cotti i cannellini, li ho passati al mixer insieme con l’acqua di cottura, ottenendo una crema, alla quale ho aggiunto l’aglio precedentemente soffritto in olio e il pepe. Ho poi rimesso un paio di minuti nel micro alla massima potenza, poi decorato con i pelati a cubetti.</span></p>

<p>Oggi ho fatto questa tipica ricetta che si può assaggiare nel negozietto in mezzo ai vicoli di Via Pia (SV).</p>
<p>300 grammi di farina di ceci<br />
1 litro (abbondante) di acqua</p>
<p>Si intiepidisce l&#8217;acqua con sale qb dentro una pentola, (togliendola dal fuoco) si versa la farina frullando con la fustra del frullatore. Lasciare poi cuocere a fuoco minimo per circa 1 ora, mescolando qb per non farla attaccare.<br />
Quando é pronta versarla in un recipiente in modo da ottenere uno spessore di un paio di centimetri. Lasciare raffreddare alcune ore finchè si rapprende.<br />
Dopo, tagliarla a fettine e friggerla in olio bollente. L&#8217;ideale (secondo tradizione) è mangiarla in un panino arabo.</p>

<p>Questa ricetta nasce per impiegare le verdure che sta producendo l&#8217;orto. Dunque, avendo a disposizione:</p>
<ul>
<li>    1 melanzana</li>
<li>    1 zucchino</li>
</ul>
<p>Ho fritto brevemente la melanzana, tagliata a fettine sottili, in olio.<br />
Poi ho soffritto la zucchina, tagliata a rondelle, in poco burro (con sale e pepe).<br />
Successivamente ho aggiunto alla zucchina salsa di pomodoro con sapori, e la melanzana tagliata a striscioline, regolando di sale e ho lasciato cuocere q.b. (~10 minuti).<br />
Insieme ho bollito la pasta che ho scolato al dente e successivamente saltato nel saltapasta con il sugo.</p>

<p>Una veloce ricettina per preparare i Calamari comprati ad Eataly (su suggerimento del <em><a href="http://grassoz.wordpress.com" target="_blank">Maestro</a></em>).</p>
<p>Ho fatto un soffritto di cipolla e aggiunto salsa con sapori vari. Dopo pochi minuti ho aggiunto al tutto il trancio di pesce spada tagliato a listarelle corte (e regolato di sale, pepe).<br />
Cottura di circa 10~15 minuti in attesa della pasta, fatta poi saltare nel saltapasta insieme al sugo.</p>
<p>Da provare: sfumare di vino bianco il sugo.</p>
